Cocoa Michelle brews and sells Fair Trade Certified™ Nicaraguan single origin coffee. The coffee, from the region of Matagalpa, is minimally processed by CECOCAFEN, a Fair Trade certified co-op, where quality control, the environment, and social responsibility are the core components of their organization. Fair Trade Certification guarantees that the farmers who grew the coffee received a minimum price for their crop. Fair Trade guidelines also ensure that certain criteria are met, including decent working and living conditions, freedom of association, access to capital and environmental practices. Nicaraguan coffees possess great body, a clean flavor, and balance, and are considered a "classic" cup of coffee by many connoisseurs. They are unique among Central American coffees because of the high altitude at which they are grown, which results in the crops not developing the pronounced and sharp acidity of other Central American coffees.
